Peanut Butter Pudding Recipe
Serves 4: Serving 3/4 cup
– 1/4 cup honey or xylitol
– 1 egg
– 1/4 cup powdered peanut butter, such as Just Great Stuff®
– 1 1/2 tablespoons arrowroot
– 1 1/3 cups nonfat milk
– 1/2 teaspoon vanilla extract
Cream the honey together with the egg.
In a saucepan, stir the powdered peanut butter and arrowroot with the milk. Bring to a boil. Remove from the heat and add the vanilla.
Slowly add a small amount of the hot milk mixture to the egg mixture and stir well. Gradually add the remaining egg mixture and combine. Stir until thickened.
Pour 3 ounces into 4 ramekins and chill. Garnish with a slice of strawberry.
