Chocolate Peanut Butter Fudge Recipe
– 1 cup bittersweet chocolate, 70% cacao, such as Callebaut®
– 1/2 cup powdered peanut butter, such as Just Great Stuff®
– 1/2 cup fat free evaporated milk
– 1/4 teaspoon vanilla extract
– 1/8 teaspoon salt
– Xylitol, to taste
Melt chocolate in the top of a double boiler.
Mix in the rest of the ingredients, adjusting sweetener to taste.
Pack or spread into a loaf pan. Cool to room temperature, then refrigerate. Cut into 12 pieces to serve.
