– 1 1/4 teaspoons unflavored gelatin powder, such as Knox
– 12 ounces hot water
– 2 cups dried coconut, organic, unsweetened
– 2 ounces egg whites
– 4 1/2 teaspoons honey, organic
– 3/4 teaspoon vanilla extract pinch of salt
Preheat oven to 250 ºF.
Line baking sheet pans with parchment paper. Combine gelatin and hot water stirring to dissolve. Add coconut.
Beat egg whites, honey, and vanilla until combined and frothy.
Stir coconut mixture into egg mixture until combined.
Scoop onto prepared pans using 1 1/2-ounce scoop and shape with damp fingers, if necessary.
Bake 8 to 10 minutes on baking sheets until edges are just lightly golden.
